    Cauliflower has been all the rage lately. It seems you can’t scroll through Pinterest without seeing it everywhere! They bake, fry, crisp up and marinate so well. You can make them into burgers, steaks, rice and buffalo wings.

    There’s good reason, too. They’re perfect for the health conscious. Cauliflower is part of the cruciferous vegetable group. An extremely powerful group of vegetables that help with cancer prevention, are loaded with antioxidants and can help lessen cognitive decline.

    I've never had any complaints from guests when serving these crispy, creamy, delicious tacos.  The cauliflower bites are also very versatile.  You can cover them with buffalo hot sauce and create a buffalo cauliflower taco as well. You can also cover them with a sweet and sour sauce and put them in a stir fry. So versatile!

    If you want to make the cream sauce a bit healthier, you can use plain vegan yogurt instead of the vegan mayo. It works wonderfully and it’s way less refined fat. You can also use a gluten-free flour, bread it with corn meal and serve on a corn tortilla if you’d like to keep the gluten out of this meal.

    Get as creative with the toppings as you like. I love to serve my tacos with black beans, pico de gallo, cilantro and a vegan cream sauce.

      Creamy, Crunchy Cauliflower Tacos

      prep time: 30 MINScook time: 22 MINStotal time: 52 mins

      ingredients:

      • Half a  large cauliflower
      • 1 cup flour
      • 3 TBL  taco seasoning
      • 1 tsp onion powder
      • 1 tsp smoked paprika
      • 1/4 tsp salt and pepper
      • 1 can black beans
      • avocado
      • lime
      • cilantro
      • 1/2 red onion
      • 1 cup water
      • 1 cup panko bread crumbs

      instructions:

      1. Mix together flour, salt, pepper, taco seasoning, smoked paprika and water until you get a pancake batter consistancy

      2. dunk bite sized pieces of cauliflower into batter

      3. dunk cauliflower into bread crumbs after the batter

      4. Place on oiled baking sheet into oven 400 degrees for 22 minutes

      Make Pico de Gallo

      1. chop up tomatoes, cilantro, onions and lime and mix together with salt

      Vegan cream sauce
      1. mix together 1/2 cup of vegan mayonnaise with 1 TBL apple cider vinegar and 1/4 tsp salt.

      Put everything together on a soft taco shell
      beans, cauliflower bites, guac, pico, lettuce and then vegan cream sauce
