Vegan Mac & Cheese with Coconut Bacon

I've been playing around with a vegan mac & cheese sauce for a while now, and I finally nailed it.  You can use corn starch instead of arrowroot powder if that's hard to find.  Coconut bacon recipe is from Hot For Food.  www.hotforfoodblog.com

Vegan Mac & Cheese with Coconut Bacon

Crispy, crunchy sweet and salty coconut bacon. Leave the little piggies alone and pig out on this cruelty free vegan mac & cheese with coconut bacon

ingredients:

Cashew Cheese
  • 1 cup soaked cashews
  • 2 sundried tomatoes - soaked
  • 3 TBL nutritional yeast
  • 1/2 Lemon
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 TBL sauerkraut (optional)
  • 1/4 tsp mustard powder (optional
  • 1/4 tsp turmeric powder
  • Medium baked sweet potato
  • 1 TBL arrowroot powder or corn starch
Coconut Bacon
  • 1/4 cup soy sauce
  • 1 TBL liquid smoke
  • 1 TBL  nutritional yeast
  • 1 tsp smoked paprika
  • 2 TBL coconut sugar or other sweetener
  • salt to taste
  • 3 cups of unsweetened flaked coconut

instructions:

1. Soak cashews for 4 hours
2. Soak sundried tomatoes for 1 hour
3. Bake sweet potato until soft
4. Blend all ingredients for cheese in high speed blender until smooth
6. Add cheese to pan and warm up until cheese thickens
7. Cook noodles of choice separately and then add cheese and noodles together
8. Top with coconut bacon

To Make coconut bacon:
1. Mix all ingredients together minus the coconut flakes
2. Add coconut flakes and stir until brown and coated
3. oil a baking sheet with coconut oil
4. bake at 325 deg for 20 minutes stirring every 5 minutes
