French toast sticks were one of my favorite breakfasts as a kid. They’re so ooey gooey, toasty and delicious and never failed to warm me up on the coldest winter mornings. These french toast sticks are also perfect to make ahead and pop them in the freezer to have a nice breakfast ready to go on busy mornings. You can just take a few out, put them in the toaster or oven and they’ll be ready to go in 5-10 minutes.
I also love pouring a bit of maple syrup in a coffee mug and then putting the french toast sticks in there as a no-fuss breakfast to run out the door with. They fit perfectly in the cup holder of your car and are easy to eat while driving. It’s saved my butt quite a few times.
These bad boys are full of fiber and nutrients to help keep you full and focused. The base with oat flour and uncooked quinoa to give it a nice crunch. They’re able to stick together with a lovely flax egg. Flax has one of the highest sources of lignans which are super bad-ass cancer fighters.
I then poured the batter into two parchment-lined bread pans. Once they were cooked and cooled, I just chopped them up into french toast stick sizes and Voila!! Healthy, crunchy, delicious french toast sticks.
