Spring is in the air and I couldn’t be happier. Every winter I question why I choose to live in Michigan: A state that is one of the greyest and cloudiest during the winter.

Once spring hits, I begin to feel like a newly watered plant that has come back to life. I don’t realize how much the dark, cold days affect me until I feel that first touch of sunlight on a 70 degree day.

I love spring because it’s also my birthday season. It’s a time for regrowth and beginning again. I get excited for all of the new potential to learn and grow.

    Creamy Vegan Orzo with Roasted Spring Vegetables

    Creamy, comforting and delicious vegan orzo with roasted spring vegetables. Great meal to make for a dinner party and to share with friends.

    ingredients:

    Cashew Cream Sauce
    • 1 cup soaked raw cashews - soak in boiled water for 10 minutes
    • 1 cup water
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1 vegetable bouillon cube
    • 1.5 lemons juiced
    • 1 TBL olive oil (optional)
    • 2 TBL nutritional yeast (optional)
    • 1/2 tsp salt
    Pasta & Vegetables
    • 1 bunch of asparagus - cleaned and chopped small
    • 1/2 sweet potato
    • 1/2 medium red onion
    • 1 cup of chickpeas - rinsed and drained
    • 1 leek - rinsed and cleaned well and chopped small
    • 1 tsp olive oil - (optional)
    • Steak Seasoning to taste
    • 2 cups dry orzo pasta
    • 1/2 lemon juiced

    instructions:

    To make cashew cream sauce
    1. Boil some hot water and pour over raw cashews.  Let sit for 10 minutes
    2. Drain the cashews and add all sauce ingredients to a blender. 
    3. Blend until smooth
    Pasta & Vegetables
    1. Pre-heat oven to 400 degrees
    2. Clean & rinse vegetables, especially asparagus and leeks.
    3. Cut into bite sized pieces
    4. Lay vegetables out on baking tray.  Add oil and steak seasoning and mix
    5. Bake at 400 degrees for 20 minutes or until golden brown
    6. Cook orzo on stove to according to directions
    7. Once cooked, drain and add back to pan.
    8. Add lemon juice, chickpeas,  cashew cream and roasted vegetables
    9. Mix well, season to taste and ENJOY!

    NOTES:

    You can make this oil free by using a non stick baking mat or parchment paper. 
    Once this sits for a bit it begins to thicken and dry out.  Just add a little liquid to smooth it out again, especially when reheating
