Easy Chickpea Salad Sandwich

This recipe is so easy and versatile.  You can put any veggies and herbs that you like in here.  This also makes for a really good chickpea burger.  Just form it into a patty and bake or fry.

    Easy Chickpea Salad Sandwich

    Easy, delicious chickpea salad that you can use just like and egg salad sandwich or chicken salad sandwich. Make in bulk and have ready to go all week

    ingredients:

    • 2 Cans chickpeas - rinsed
    • 1/2 cup vegan mayo
    • 2 TBL mustard
    • 1/2 red onion
    • 1-2 stalks celery - chopped well
    • 1 TBL dill
    • salt & pepper to taste

    instructions:

    Mash up the chickpeas.  Add in the chopped onion, celery, mayo, mustard and spices.  Put in tupperware and save for the week.  Use whenever you want a quick, easy sandwich.  You can also for this into patties and fry or bake them like burgers.
